EVERY PLATE
HAS A ROOT.
Born from the kitchens of Kongunadu, our food is bold, earthy and deeply rooted in the land. Pepper, shallots, curry leaves, dried chillies and native spices come together in recipes passed through generations.

Ancestral Hearth
Slow cooked over neem wood flames
Cooked with patience, served with pride.
In our mess, we don't rely on shortcut pastes or artificial colors. We source small shallots straight from Erode markets, black pepper from hill estates, and crush spices daily on granite stone hearths.
Every dish carries the smoky perfume of neem woodfire and the natural sweetness of A2 cow ghee and cold-pressed gingelly oil.
FROM THE LAND.
TO THE LEAF.
Journey through the fertile red loam belt of Kongunadu—from Kovai's Siruvani waters to Erode's small shallots and Pollachi's coconut groves.
Coimbatore (Kovai)
Nestled at the base of Western Ghats, Kovai is famed for pure Siruvani water, warm hospitable culture, brassware cauldrons, and granite grinding stones.
Erode
Famous worldwide for golden organic turmeric and hand-picked small shallots. Kongu curries owe their rich naturally sweet gravy base to Erode shallots.
Pollachi
Lush coconut plantations stretching to the horizon. Fresh coconut milk, coconut strips, and chilled Elaneer are Pollachi’s gifts to Kongu dining.
Salem & Namakkal
Surrounded by Shevaroy & Kolli Hills, famous for organic free-range country chicken (Naatu Kozhi), wild mountain herbs, and Tellicherry black pepper.
Tiruppur & Karur
Pioneers of rainfed farming, harvest of Seeraga Samba short grain rice, Kambu (Pearl Millet), Thinai, and traditional wood-pressed sesame oil.
PALLIPALAYAM
CHICKEN.
Authentic Kongu Recipe • Zero Water Added
A fiery Kongu classic born along the banks of the Kaveri river where shallots, dry red chillies, and thin coconut strips come together with tender bone-in chicken.
Unlike modern gravies diluted with water, authentic Pallipalayam chicken relies strictly on juices released by free-range country chicken and slow-sweated Erode shallots cooked in cold-pressed gingelly oil over a neem woodfire.
Erode Shallots
Slow-sweated for natural sweetness
Ramnad Chillies
Sun-dried red chilli flakes
Neem Wood Flames
Natural smoky infusion & soft heat
SLOW FIRE.
DEEP FLAVOUR.
Earthen Clay Pot Hearth Cooking
Inside our kitchen, gas stoves are set aside for traditional firewood hearths. Handmade earthen clay pots distribute a gentle, even heat that coaxes rich marrow juices, essential oils, and aromatic spices into a harmonious gravy.
Neem Wood Embers
Imparts a delicate, natural charred fragrance impossible to replicate with commercial gas ranges.
Earthen Moisture Seal
Clay breathes as it cooks, trapping moisture so country meats remain exceptionally tender and flavorful.
INGREDIENTS OF KONGU.
Native produce harvested from Western Ghat slopes, Erode farms, and local village gardens. Tap any ingredient to discover its story.
Black Pepper
Tellicherry black pepper, handpicked from western ghat slopes. We crack it fresh for every dish to provide warm, fragrant heat without burning.
Dry Red Chillies
Sun-dried Ramnad Mundu chillies known for their rich crimson hue and fruitiness without excessive harshness.
Small Onions (Shallots)
Erode shallots peeled by hand daily. When sautéed in cold-pressed oil, they melt into a silky, sweet gravy base.
Roasted Coconut
Pollachi coconuts grated and slow-roasted on iron griddles until golden bronze before being stone-ground into masalas.
Fresh Curry Leaves
Plucked fresh every morning from local village gardens, flash-fried in hot oil to release essential aromatic oils.
Cold-Pressed Gingelly Oil
Crushed in wooden chekku mills with jaggery. Gives our roasts their signature glossy finish and nutty fragrance.
Stone Flower & Cinnamon
Kalpasi (black stone flower) combined with Ceylon cinnamon and fennel seeds creates the signature Kongu meat aroma.
Native Millets & Samba Rice
Fragrant Seeraga Samba short-grain rice and heritage Thinai & Kambu millets harvested directly from Kongu farming belts.
